This pan does not work.
Impossible to use. I was not able to make one crepe. It sticks to the pan no matter how much fat I apply and it is impossible to turn. I have to return it. I am actually very surprised because I own other Zwilling cookware and they are amazing.

Healthy, beautiful non-stick pan for dosas/ crepes
Great pan for those who love to cook and are willing to treat it with care. We've used this pan for almost 4 years and absolutely love it and just bought our 2nd one after a lot of research. It takes a little while to heat up to medium heat, but your patience is rewarded with an evenly warm surface which maintains a steady cooking temperature to create one crispy, beautiful dosa/ crepe after another. Excellent, consistent results. Ability to get thin and crispy dosas with just the right amount of browning, looked and tasted like they were from a gourmet restaurant!

I was new to cooking on an enameled cast iron surface, so I'll share some things I've learned, as this is my 2nd pan ( I mistakenly treating our 1st Staub as if it was a cast iron surface, so probably seasoned it way too much with olive oil and mistakenly scraped the oil which had built up from some spills on the exterior surface... I didn't soak it to remove the build up which was creating an uneven cooking surface.

Before the Staub, I was making dosas & parathas on a non-stick pan, which heats up much faster. I was looking for a healthier alternative to use on our new electric ceramic/ glass cooktop. After doing a lot of research on the dangers of PTFE/ teflon, PFOA, PFAS, and other potentially healthier materials such as Hard-anodized aluminum, Granite-coated Anodized Aluminum, classic 5ply all clad stainless steel, etc... I narrowed down the search to Le Creuset, Staub and another far less expensive brand. During the research journey, I enjoyed learning about various methods of cooking with enameled cast iron, stainless steel and different types of oils, how to create non-stick coatings/ seasoning your cookware, etc..

In the end, I realized I had the best possible product in the Staub enameled cast iron crepe pan with it's healthy cooking surface and elegant strength. The Le Creuset was too expensive, though I liked that it has a metal handle which would allow the pan to go into the oven too. The other pans, though they said their coatings were free of teflon/ PTFE, etc.., somehow I feel safer purchasing from an established company whose attention to classic, proven materials, detail in design quality, rigorous functionality and elegant aesthetics makes cooking feel like an art while keeping our family safe.

I'm now adding only a very light coating of a high heat canola oil, will try some others too, but am staying away from olive oil on this pan. Heating up the pan to medium heat for the first crepe, then lowering the temperature for the rest of the crepes. They cook evenly, flip easily and slide off just as easily as the old non-stick pan. I was happy to get this pan on sale from William Sonoma and look forward to many new creations in the kitchen! Hope this is helpful to folks new to ceramic enameled cast iron cookware. Best wishes!

Note:
Avoid any water from dripping onto the hot pan, otherwise clean up can take some time in the beginning). I love your pan and will do my best to maintain it's beauty. It would be helpful to include a sample scrubber to use for cleaning/ mention a brand to purchase, if something sticks. On my first use of the new pan, we covered it with a lid to steam cook one style of crepe, and when we lifted the lid, water fell onto the Staub pan which resulted in oily bumps. After the pan had cooled fully, I washed it with hot water and dish detergent, but I had to continuously soak it and gently scrub the residue before it was restored to its pristine condition. It took a long time, almost an hour. I didn't want to soak the entire pan in hot water since the handle is made of wood. So, if you can make this pan with a metal handle, that can be submerged in water for cleaning AND go into the oven (if ever needed), that would be really great! Thank you very much.

Excellent Crepes!
Returned from Paris and wanted to make crepes the proper way. My Crepes Suzette have been nothing but spectacular while using this pan. If you want to make crepes or pancakes and have them consistently turn out wonderful, use this pan. You will not be disappointed!!!

Grazie Mille to Staub for this product!
It was so much fun making my crepes in this incredible pan! The crepes came out with a soft center and crispy sides and the utensils were fun to work with. The spreader works to make very thin crepes and the wooden lifter lifts without scratching nor tearing the crepe! Grazie Mille to Staub for such fine cookware- I highly recommend this as a staple piece in your cook drawer at home!
